The key is to buy your favorite cheese, firm, soft, mild, sharp… the more assorted the better! Serve with some nice cold cuts, or smoked salmon and a sumptuous bowl of berries or sliced pears or apples. Add raw almonds or another nut that you love. Finish the board with a bowl of honey for drizzling onto your cheese. Now for the crackers… I LOVE BRETON Garlic-Herb Gluten Free Crackers. Miltons, Mary’s, Saffron Road, Blue Diamond all make superior GF crackers. I’m sure there are so many more to your taste.

Back to the smoked salmon, I prefer gravlax or dill crusted salmon, but, some say it’s best to keep it classic and go for a traditional smoked salmon. I’ve even made my own home made cold smoked salmon in the oven, overnight. It’s a real treat, keep in mind any thing you put on the board will be wonderful. Go for it!

Melt the butter in a pan and gently cook the shallots on a low heat for a few minutes. Meanwhile, roughly chop the peas either by hand or briefly in a food processor then add to the shallots with the cream and tarragon. Season and simmer to a thick-ish consistency.
