Bibi’z is a restaurant near Paramus, NJ right around your corner!

I began my research for Bibi’z menu since the early age of 8 or 9, when my mother made us help with her tremendously annoying organic vegetable garden…

She enlisted the entire family, like good soldiers, we would borrow the rototiller from my uncle and we would make our first till to rotate the soil that has been resting since last fall.  After the tilling, we’d leave the ground and our bodies to rest for a week or so.

Then came the rows of vegetable seed planting…

Each row was designated and had a specific amount of space in between for the size of the plant once it was fully grown, and the amount of sunlight it needed.  There were heirloom of all kinds… tomatoes, cucumbers, squash, zucchini, green beans, fava beans, onion, garlic, mint, basil, oregano, thyme, green bell peppers, jalapeno, grape leaves vines, mallow leaf, swiss chard… I must be forgetting something.

And every morning she would go to the yard and give a little love to the plants with a light 15 min sprinkle of water to her babies, and pull weeds, and clip off the monster bugs that would grow under the tomato leaves.

At sundown, another sprinkle of water for 15 to 20 minutes would give the plants.  This painstaking process went on for my entire life. Year after year!

But the results were unbelievable food that, in today’s society, most have never tasted.

A tomato pull off a fresh plant from an organic garden, has a flavor that is so intensely delicious, it’s like taking a bite in heaven.

My life as a good eater left me no choice but to be committed to serving carefully sourced and thoughtfully prepared, clean food.  On Thursday, January 13, 2011, we open our doors to bring you our love affair with food at Bibi’z Restaurant | Lounge.

Doing it well is sourcing the best that we can in gluten-free, healthy and sustainable foods, by starting with the best and infusing every dish with Love!
